2 slices (1 Ginger root, raw
8 cloves Garlic, raw
1 medium (2-1/2 Onions, raw
2 cup, cubes Eggplant, raw
1 Tsp Mustard powder
2 Tsp Cumin Powder
INDIAN STYLE EGGPLANTS
Heat oil and fry onions till golden brown
Smash ginger and garlic together and add to onions and cook till golden brown
Add eggplants and little more oil, salt to taste
Add mustard powder, chili or any spice mix and cumin powder
Fry eggplant in medium heat until golden brown for 15 min covered.
Serve with rice.
